MIL called me yesterday afternoon told me that Leon's great-grandma was not doing well....can even drink....she is going down to TI with my fil today afternoon and asked me to send Leon to my mom to take care....then later at night about 9.30plus pm mil call hubby told that grandma has passed on....sil take mil & fil down to TI immediately as hubby and I need to settle up some office thingy....

Hubby told me see how many days for the ceremony if 5 days then we will heading down to TI on Wednesday nite or Thursday morning or else we will going back to TI tonite or tomorrow morning if for 3 days....

Although Leon boy & I seldom meet hubby's grandma and not so close to her but I can feel those feeling for her lost....but this ends her suffering on earth and left to Heaven....Hence, life still have to go on....

Hubby just called, we will going down to TI on either tomorrow nite or Wednesday morning as obituary will leave on Thursday morning....

and this for our dinner on Monday nite....

Fried English Gourd....

i) Stew Coca-cola Chicken

1) 500 gm of Chicken
2) 1 can of 125ml Coca-cola
3) 1/2 clove of garlic (chopped)
4) Ginger (chopped or slices)
5) 1 table spoon or to taste of soya sauce
6) 1/2 table spoon or to taste of pepper
7) 1/2 table spoon or to taste of sesame oil
8) 1 tea spoon of thick soya sauce
9) 1/2 tea spoon of corn starch

a) Marinade the chicken, soya sauce, pepper & sesame oil.

b) You can marinade it for 1 hour before cook or over nite.

c) First heat up the wok with 2 table spoon of cooking oil or olive oil to saute the garlic & ginger till fragnant.

d) Now can throw the marinade chicken and give a few fry.

e) When you see the chicken like turning into cook color, pour the 1 can of 125ml Coca-cola (don't frighten yourself with the bubbles, it's normal)

f) Give another few fry before add the thick soya sauce and fry again till even color.

g) Close it with wok cover to stew the chicken.

h) On and off check the Coca-cola level and fry the chicken so that it can evenly stew and cook.

i) Once you see the gravy like it's almost dry up for your next check, then you add in the corn starch (mix with 2 table spoon of water) and slowly fry again. Lift up and serve.

ii) Spring Onions with Preserved Salted Vegetable Omelette Eggs

Easy peasy recipe as I know everybody can fry Omelette Eggs don't you?

1) Few sticks of Spring Onions (cut about 2cm each)

2) 1 tea spoon of Preserved Salted Vegetable (chopped)

3) 3 eggs (beaten)

a) After beaten 3 eggs, throw in Spring Onions & Preserved vegetable and beat it again evenly.

b) Add some soya sauce & pepper to taste.

c) Heat up wok with cooking oil or olive oil and pour in the mixed beaten eggs and fry.

d) Lift up and serve.

iii) Fried English Gourd

1) 1 English Gourd (Chinese call it "Fat Sau Kua") Buddha's palm Gourd....hehehehe (peeled off skin and cut slices)

2) 1/2 clove of Garlic (chopped)

3) 2 table spoon of Dried Prawns

4) Red Chillies (cut slices)

a) Heat up the wok with cooking oil or olive oil, throw in garlic and dried prawns and stir till fragnant.

b) Pour in the English Gourd and stir it like you fry normal vegetables.

c) Red chillies will be final step when you judge the English Gourd almost done.

d) Lift up and serve.

All in all, it's yummy for dinner that nite especially the Stew Coca-cola Chicken and Hubby ask for more rice....lol
