Father's Day Cheesecake....


Hi there!...it's been ages after my last post ay....as I had a full plate with workloads & orders from customer for the past few weeks....who say economy was downturn while I work like hell over here?....haha but I think economy is picking up now as some company was starting to higher peoples back edi....am I rite? no?...whatever as long as I should thanks God that I still stay with this company till today while many peoples out there been retrenchment....I've been save up quite numbers of post but no time to edit, upload photos & blablabla lah....will try my best to play catch-up after this ok....

I make this Blueberry Cheesecake for Father's Day during our dinner at pil's house to celebrating the day....mil cook a few dishes while I bring baked potato sardin aka failed project & the cheesecake....

Okay now I wanna tell why the Baked Potato Sardine aka Failed project?....see the below photo and the explanation....



Actually I wanna make fry Potato Prawns Cutlet but due to the batter too watery so I alter it became Baked Potato Sardine by adding in 1 can of sardine + few pcs of breads and bring in to the oven to bake.....wakakakakaka

As you can see the righ side was melted cheese but not all the surface as 1st reason was my fil don't eat cheese and the other reason my fridge it so happen that day out of cheese stock....lol.....

Mango Cheese Cake....

Backdated post....

Me being addicted to make cheese cake is not just end after the Blueberry Cheese Cake. This round I try to make Mango Cheese Cake which the formula extracted from internet surfing. The outcome I mean the taste was not good as the Blueberry Cheese Cake....hmmm...maybe different people with different taste as some find it OK lar, acceptable lar...as each have its own unique taste wor....perhaps you guys wanna try out and tell me what is your opinion besides some of the ingredient I've amend abit after I did a trial of the sweetness and the sour taste of the lemon juice as I guess Mango Cheese Cake shall be sweet and sour taste mar....lol .....


AAhhhh....this Mango Cheese Cake is from me you know....amacam?

Ingredients :-

Base :
1) 150gm digestive biscuits (crushed)
2) 100gm melted butter
3) 50gm toasted cashewnuts (chopped) Optional

Cream Cheese Mixture :

A :-
1) 500gm cream cheese
2) 100gm caster sugar
3) 5 tbsp of fresh mango puree
4) 2 tbsp of lemon juice
5) 250gm of mango flesh (diced)

B :-
1) 200gm whipping cream (whipped)
2) 1 1/2 tbsp of gelatine powder, mixed with 4 tbsp of water and double-boiled until dissolved

Top Layer (OPTIONAL) :-
1) 1 tbsp of gelatine powder, mix with 100ml of water, double-boiled until dissolved
2) 2 tbsp of fresh mango puree



METHOD :-
A. (BASE) - Combine all the ingredients and press into 9" round loose baking tin. Chilled in the fridge for 20 mins or until the base is firmed.

B. (CREAM CHEESE MIXTURE) - Beat the cream cheese, caster sugar, mango puree until smooth. Add in mango flesh and stir well.
Mix in whipped fresh cream. Lastly add in gelatine mixture and stir well. Pour the mixture into the prepared base.
Chill in the fridge for 3 hours.

C. (TOP LAYER) - Mix mango puree with dissolved gelatine powder. Pour into the set cheesecake and return in to the fridge for overnight. Cut into pieces and serve.

. Mine photo on top which I make was skip the top layer.

Tips to cut cheesecake : Soak your knife in to hot water, wipe the knife dry and cut the cheesecake. You’ll get a nicely cut cheesecake.

Blueberry Cheese Cake


A very simple step indeed for those who 1st timer to make cheese cake....No need to bake in the oven one....





Ingredients :-

1) Digestive biscuits / Marie biscuits - 200 gms (for the base)
2) Melted butter - 150 gms

3) Thickened cream / Whipping cream - 125 ml

4) Custard sugar - 100 gms

5) Cream cheese - 250 gms

6) Gelatine - 20 gms (melted with 60gms of water)or double boiled until dissolved
7) Blueberry filling (optional)




Place the digestive biscuits in a plastic bag....



I used my hands to slam the biscuits on table top and punch with my hands as I do not have other tools mar....quite pain my hand leh...



Pulverised biscuits....



Mix the biscuits with melted 150 gms butter as the base....



Blend cream cheese together with custard sugar, thickened cream and melted gelatine till creamy....Lastly pour into the biscuits base....



Then chilled in the fridge for 2 hours....After 2 hours the cheese cake can be serve but I lay blueberry filling on top with almonds chip....



Tadaa!....yummy!....

Bento 7

Today is my puff day....having all the way down from breakfast till lunch time with tuna puff....lol....



This is the bento that I brought today....the puffs looks like almost the same sell at bakery shop ey?....



I bought ready made pastry puff from Tesco....you can find in Giant or Carrefour as well...make sure it's "KAWAN" brand....10 pcs for about RM3.59....



It's like wantan skin in square shape....defrosted it about 8mins then stuff with any ingredients that you wish....I use canned chilli tuna brand "AYAM" add with some crabsticks and mayonise....



You can either fold the pastry into triangle or rectangular....I prefer triangle shape as can stuff more ingredients inside....


I still yet to find time to decorate my dull bento....*geezzz*

Glimpse of my Chinese New Year 2009 (Part 1)

Huh...what a great relieved that CNY is going to end soon....can be more relax after this....my CNY cookies story still not end yet....2 days before the CNY I'm still busy continue baking my Pineapple cookies as I bought 2 packets with 500gm each of the ready made pineapple jam....I tought I manage to finish all before CNY but once again I failed...this time not to ingredients but to timing.....lol...I should buy only 1 packet instead of 2....now still have balance of pineapple jam sitting in my fridge....my colleagues may be fortunate to get to eat my Pineapple cookies again as I'm going to continue the task after CNY......during those hard time while I'm baking, Daddy was so nice look after Leon boy....



What a ugly starting....bear shape....kekekekekeke

The dough I try to make round but still prefer the long one...once again sorry for the ugly handmake....to cut the pastry is easy than roll the pineapple jam dough....sigh

Repeat again some Bunny shape....



Yeah...penguin shape and I give up the butterfly as a lot of work to make pineapple jam dough for the wings....

CNY Preparation (Final) & Pineapple Cookies

2 days more!!....yeah..2 days more we will celebrating our Chinese New Year for the year of Cow...I hope this gonna end fast as to run those errands really pull my hair up ler.....some update for my pineapple cookies.....



Before going into the oven....I make "star" shape for my pineapple cookies....



My first tray....the result not very good as I forgot to brush over with the eggs yolk on top of the cookies....



2nd tray with egg yolk mix with egg white but turn out like over burnt lar....



3rd tray....improved a bit....




4th tray....still ok lar....can you see the pineapple jam?...the shape changed from "star" shape to round as it's already midnite about 1.30am and I still have a lot of dough to go and and need to go to work lar....



5th tray....even the "star" shape also run out of the shape....luckily not for sale....lol...


That's all for now as I have to all settle my paper work by today before I go off for 1 week holiday....if not when back to work I'm sure I cannot remember to continue my job from where....

CNY Preparation 1 & Almond Cookies

Countdown to CNY will only have less a week now....what did I done so far?....hhmmm.....seems like almost 90% to the end....left only my bedsheet need to change and continue my half way of the decoration....this year would be my 2nd year celebrating CNY with the 'lil one...with him sometimes I have to let go my afternoon nap or work extra time in the midnite as he is very very sticky unless daddy was around to look after him....if unlucky he'll get spank from me....as I told you guys before I can't stand of baby or toddler or kids crying.....really annoying and irritating my ears....hubby know me well about this and seems like till know I still cannot control my emotions to overcome the problem....think of 2nd baby?..no thanks at this moment! unless can guarantee he/she will not cry at anytime he/she like....got meh?.....

OK..enough of those nagging parts....welcome to my world of lousy baking.....spend almost 4 hours to bake the Almond cookies for 2 containers niah...why?..because my oven the lower tray heating elements spoilt liau lar...cannot send now to repair....recently bought for about 3 months only ler....I wonder this phrase still valid or not..."good things not cheap and cheap things not good ar"....price at RM169 for 24 litre brand Faber....I doubt the oven already damage for the very 1st day I bought it home lar but not very sure about it as 1st time own a oven mar....as most of time I need to switch the lower tray back to upper tray to bake again....always curious why the lower tray the food cannot cook one?....then that day bake till I fuming mad so called the customer serviceto find out and the technical people told me the lower heating element spoilt and I know it might take for months to repair it thus will send it after CNY lar....


Got the recipe from one of main bentos supply Veron, baking can count one of tough job but many people outside there still complaining the price was expensive...must make profit one mar...no profit job who want to do?....aiyo...see I nagging again....

1st round of my Almond Cookies....(last week)



Over burnt Almond Cookies....


I let my colleagues be my guinea-pig and they claimed taste nice....yeah...


Ingredient : -

A : 100g butter
80g caster sugar or normal sugar for cooking also can

B : 2 eggs whites
1 tsp vanilla essence

C : 80g plain flour or multi purpose flour

Method : -

1) Mix ingredient A first, beat till fluffy, add in ingredient B and mix well before add in ingredient C .

2) Use the back of the stainless steel spoon to scoop and place it on a baking paper. Level off the excess mixture and try to make it thin so that will taste crispy.
3) Place the baking paper with mixture in the oven.
4) According to her method, bake in a pre-heated oven at 170° for 15 mins.
5) Different oven may have different temperature so it may cause ov
er burnt for 1st to 2nd trial.
5) For my oven, I baked with 150° for about 15 mins.
6) When it turn golden, let it cool and store it quickly to prevent softness.



2nd round of my Almond Cookies....(last nite)....jeng jeng jeng....



"L" license passsed...this time not over burnt..it's call golden already...hehehe


Place nicely in to the container....


I double up the ingredients and after the hard work for 4 hours with the lower tray heating element spoilt....I have 2 containers only.....
